If you are looking for ideas on wines to pair with your Easter dinner, here are some suggestions from our winemaker.

Illinois Sparkling Co.

  • Brut Ombré Rosé has bright, fresh, fruity aromas and flavors and is a wonderful pairing for a meal.
  • Pét Nat Rosé, like most rosé wines is a fruit friendly wine. It has a mouth-watering freshness, making you crave another sip.
  • Sec is a mouth-watering fruity sparkler. With a hint of sweetness, Sec is an amazing companion with food but is also delightful to sip on its own.
  • Demi Sec Rosé This sparkler pairs well with your chocolate bunny and cut-out cookies.

August Hill Winery

  • Vignoles is a semi-dry, light-bodied white wine that pairs wonderfully with ham.
  • Niagara is a favorite to pair with ham for those who prefer a sweet white.
  • Moscato pairs well with light desserts such as your lamb or bunny cake. It also pairs nicely with most flavors of jelly beans.
  • For those who only drink red wines, we recommend Berlyn (semi-dry), Chambourcin Reserve (dry), or Red Letter (semi-dry & wine club members only).
  • Rosés are fun and incredibly food friendly. Try LaBelle Rosé (dry) or Chambourcin Rosé (semi-dry).
  • Our Mimosa in a 355 mL can is a great pairing for Easter brunch.

How many bottles do I need?
A 750 mL bottle of wine holds about five glasses of wine (5 ounce servings). We recommend having at least two wine choices for your guests.

The commissioning ceremony for the USS Hyman G. Rickover (SSN 795) submarine occurred on Saturday, October 14 in Groton, CT. The submarine was named after Admiral Hyman G. Rickover, who grew up in Chicago’s Lawndale neighborhood. Rickover is known as the “Father of the Nuclear Navy.”

A local sparkling wine made by Illinois Sparkling Co., will be served at a key celebration during commissioning weekend. This traditional method sparkling wine, named Blend 795 after the ship’s number, was created specifically for the christening of the submarine, which occurred in July, 2021. This wine was served on Friday, October 13, at the unveiling of the Admiral Hyman Rickover exhibit at the Submarine Force Museum.  

“We were honored and excited when the USS Hyman G Rickover commissioning committee asked us to be a part of these memorable celebrations,” said Mark Wenzel. Mark is the winemaker, and he and his wife Teri are owners of Illinois Sparkling Co. (ISC).

Blend 795 is made from 100% Illinois-grown grapes and is a traditional method sparkling wine  with notes of lemon, marmite, brioche & hazelnut and plenty of Prairie State pride. For each bottle sold, $5 is donated to the USS Hyman G Rickover commissioning committee, who organized the commissioning weekend ceremonies and continues to provide support for submarine crew members in times of need.

While ISC Blend 795 is only available online or at the August Hill Winery Tasting Room in Utica, IL, you can find other Illinois Sparkling Co. wines throughout the state including Publican O’Hare, The Gwen Hotel, Avec, Pops for Champagne, and Patina Wine Bar. The wines are also available at retail locations like Binny’s.

So, you mean to tell me that August Hill Winery just so happens to harvest their wine grapes in August? You got that right. It’s time to reap the fruits of our labor!

The 2022 Harvest occurred on August 15-16 at our August Hill / ISC Winery & Vineyard in Peru, IL. Our workers arrived to the vineyard at 5:50 a.m. for two mornings in a row, ready to harvest some heavenly grapes with Bubbly Wenzel. We gathered our Frontenac Gris grapes on Monday and our La Crescent grapes on Tuesday.

The early mornings were crisp and cool, as the dew dried from the vines and grass. We could see the steam rising off of the Illinois River from the top of the hill. It was a beautiful, peaceful sight.

Bubbly Wenzel made sure to start gathering his grapes at the absolute perfect time. We harvested quickly as each crate of grapes traveled down to the winery for pressing. We made ‘grape’ timing, as it was a bountiful Harvest!

So, why does Bubbly Wenzel choose a specific time to collect his grapes? Well, he has his ‘raisins’! We all wait patiently for Veraison to occur in the summer – the crucial onset of grape ripening. During this process, the grapes undergo many changes: the berries turn color, soften and grow; the seeds turn brown and harden; the natural sugars increase and the acidity decreases, and the flavors and aromas develop.

Throughout this time, we have to make sure to keep hungry critters away from our fruit! However, it’s nice to see some wildlife build a home with us in the vineyard every now and then.

One thing about Wine Harvest: we don’t necessarily plan; we just do. Nothing is ever perfect, and things go awry.

But rest assured… there will be wine. And it will be amazing.

Picture this. It’s a peaceful Monday morning, and we’re out at the ISC Vineyard on the hill at 6 a.m. The temp is a cool 57 degrees outside, and there’s steam floating off the Illinois River. The grass is dewy, and a mild fog covers the vines for as far as the eye can see. So, what’s going on here? Well, this is surely an exciting day for the books – we’re harvesting our Frontenac Gris grapes! The 2021 harvest officially begins.

One of the most important decisions for a winemaker is knowing when to harvest the grapes. In the northern hemisphere, harvest time typically occurs in late summer, when the grapes reach their full maturity. Beginning in late July or early August, the grapes begin undergoing a process called veraison, where the grapes ripen and change color.

Winemaker Bubbly Wenzel takes great care to watch and wait for the perfect balance of sugar content and acidity for crafting the perfect sparkling wine. After close monitoring, he firmly decided that Monday, August 16th was the ideal day for our 2021 ISC grape harvest.

When harvest begins, it’s all hands on deck. Our awesome grape pickers spend the day handpicking and quickly filling up bucket after bucket of ripe, luscious grapes, as our truck stands by to transport them down the hill for production. 

We handpicked grapes for hours, as the sound machines in the vineyard relentlessly scared off any critters hoping to get a taste. The careful and meticulous handpicking is one of the key steps in producing the highest quality ISC sparkling wine. While this process is undoubtedly hands-on and labor-intensive, it is well worth it for crafting the finest bubbly one can hope to get. 

It takes many hands to harvest the grapes.

By the end of day one, we picked approximately 11,000 pounds of these delicious grapes! And guess what – we’re still not finished. These grapes will be used to make both our ISC Brut and ISC Sec.

From the fruit on our vines to the bottle of bubbles in your hand, rest assured that we’ll never stop obsessing over our craft. Stay tuned for the next steps in our 2021 Harvest!

Illinois Sparkling Co.’s Blend 795 Sparkling Wine will Christen the USS Hyman G. Rickover

Two bottles of Illinois Sparkling Co.’s Blend 795 were shipped out to General Dynamics Electric Boat in Groton, CT, for the christening of the USS HYMAN G. RICKOVER (SSN 795) submarine. The christening will take place on July 31, 2021. One bottle of Blend 795 will be broken over the sub during the christening ceremony, and one bottle will travel with the submarine throughout its service.

The submarine is named after Admiral Hyman G. Rickover, who was known as the “Father of the Nuclear Navy.” Rickover has a special connection to the state of Illinois as he grew up in Chicago’s Lawndale neighborhood.

“We were very excited when General Dynamics asked us to be a part of this memorable celebration,” said Mark Wenzel. Mark is the winemaker, and he and his wife Teri are owners of Illinois Sparkling Co.

Blend 795 is named after the ship number. It is a traditional method sparkling wine produced at Illinois Sparkling Co.’s Peru, IL, production facility. Made from 100% Illinois-grown grapes, this crisp, brut-style sparkler has notes of lemon, brioche, and hazelnut. Blend 795 sparkling wine is available for sale to the public at the August Hill Winery tasting room in Utica, IL, as well as online at ISCbubbly.com. For every bottle sold, $5 will be donated to the USS Hyman G. Rickover Commissioning Committee, who organizes events surrounding the launching and commissioning of the submarine and provides support for the submarine crew members and their families in times of need.

Illinois Sparkling Co. (ISC) was previously honored to be a part of another special submarine christening. In 2015, ISC’s Blend 786 was used to christen the USS IILLINOIS (SSN 786).

Exciting news! We were asked by General Dynamics Electric Boat to provide an ISC sparkling wine to christen the USS HYMAN G RICKOVER (SSN 795) submarine in July of this year!!!

Some of you may remember that we previously were honored to be a part of another special sub christening: Our ISC Blend 786 was used to christen the USS IILLINOIS (SSN 786). Pictured above is a photo of that christening in 2015.

Our winemaking team is now working on the creation of Blend 795. Just like our previous bubbly, for each bottle sold of Blend 795, a $5 donation will go to the USS Hyman G. Rickover Commissioning Committee.

  • Seating: Seating is on a first-come, first-serve basis. The seating area is spread out to allow for greater social distancing. Please do not move any of the tables or chairs.
  • Masks: The State of Illinois requires that both vaccinated and unvaccinated individuals wear a face covering in all indoor public spaces. However, face coverings may be removed while eating or drinking.
  • Menu: You can view our online menu on your mobile device. Disposable menus are also available if needed. A staff member will stop by your table to take your order.
  • Tastings: We are now offering tastings! The cost is $10 to taste 6 August Hill & ISC wines. Tastings are on a first-come, first-serve basis. Wine Club members receive a complimentary tasting (limited to 2 people per visit). 
  • Food: We currently offer chocolates and light snacks. These items are listed on the last page of our menu.

YOU CAN – ORDER ONLINE & PICKUP YOUR WINE

When ordering online, you have the option to pick it up in the Tasting Room. Simply place your order online and choose “Hold for pick up at August Hill Winery.” For pick up orders, share with us – in the pick up instruction section – when (time and date) you plan to pick up your wine, and we will get it ready for you. Please allow at least 30 minutes between the time you place your order and pick up your order.

You can continue to place online orders and have your favorite wines shipped to you. We ship to the following: Arizona, California, Colorado, Washington D.C., Florida, Illinois, Indiana, Iowa, Michigan, Minnesota, Missouri, Montana, Texas, and Wisconsin.

Wine Club members can continue to enjoy the benefits of membership including special discounts, first access to new wines, and more. Although we aren’t able to offer the 2 complimentary tastings per visit for members right now, we are offering $5 off flights, for 2 people per visit, in lieu of the tasting.
